Mooncakes Without Filling - Qizi Bing

Qizi Bing can be considered as the true "old-fashioned" pastry. Many people believe that the taste of Qizi Bing is similar to mooncakes because its dough is made using the same syrup skin as mooncakes, which is different from the flaky pastry used in traditional Chinese pastries.

 

Qizi Bing is one of the few pastries without any filling, and its taste depends entirely on the dough's careful preparation. The syrup skin needs to be boiled for at least three hours and cannot be used immediately. After boiling, it needs to be left for several days until it becomes "pure" before it can be used. When the syrup becomes as thick as western-style pancake syrup, it is mixed with flour
