Intestine cake, pronounced "Ga Gau Zai" in Cantonese, is a traditional pastry from walled villages that is on the verge of extinction. It is a savory and fluffy snack made primarily of flour, glutinous rice flour, baking powder, and scallions. Some recipes also include peanuts.

 

During festivals in walled villages such as Ping Shan, Ha Tsuen, and San Tin, villagers come together to make traditional pastries and share them with each other. Intestine cake is one of these pastries. However, as times have changed, fewer and fewer walled village residents know how to make intestine cake, and this cultural heritage is at risk of being lost.
